Egg Roll Bowl
This recipe combines ground turkey with shredded cabbage and carrots for a flavor reminiscent of egg rolls, without all the frying. It requires zero chopping or prep time – simply throw the ingredients in the pan and cook.
Cooking ground turkey can be tricky, so be sure to fully preheat your skillet before adding the meat. This will help the turkey brown properly which we need to taste good. Cook over high heat, breaking up the meat into small crumbles as it browns. And don’t worry if your first try doesn’t turn out perfectly! Just be careful not to overcook the turkey, or it might be a bit dry. Remember to have patience with yourself. You’re just trying to feed yourself, not win any culinary awards.
Ingredients
- 8-10 oz ground turkey (93% lean / 7% fat)
- 3 cups of raw coleslaw mix
- 1 bag of microwaveable rice
- Optional finishing touches (sesame seeds, red pepper flakes, green onions, cilantro, kimchi, etc.)
Seasonings
- 1/2 tbsp toasted sesame oil
- 1/2 tbsp soy sauce (can use low-sodium version)
- 1/4 tsp seasoned salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 lime
Instructions
1. Heat a large skillet with 1/2 tablespoon of olive oil over medium heat. When the pan is warm, cook the coleslaw mix, stirring frequently so it doesn’t burn. You can cover the pan with a lid but be sure to keep stirring. When coleslaw is soft, transfer to a bowl and set aside.
2. If the skillet is still clean, turn the heat up to high with another 1/2 tablespoon of olive oil in the same or different skillet. Do not add turkey until the pan is hot. To test, sprinkle a few drops of water on the pan until it sizzles.
3. Cook the ground turkey for 2 minutes on each side or until browned.
4. When the second side is almost done cooking, add toasted sesame oil, soy sauce, seasoned salt, black pepper, garlic powder, onion powder, and the juice of half a lime. Stir well to combine and break the turkey into small crumbles. Turn heat down to medium-high.
5. Add the cooked coleslaw mix back to the skillet and toss to reheat.
6. Microwave rice according to package instructions (about 90 seconds).
7. Serve turkey and coleslaw mixture over rice. Finish with any of your favorite toppings: sliced green onions, cilantro, sesame seeds, red pepper flakes, kimchi, etc.
8. Optional: If you’re looking to impress someone, fry an egg and place it on top of each bowl before serving.
