Lazy But Tasty Chicken Stir-Fry

This recipe is perfect to start a busy week. The chicken can be prepped beforehand, and the clean-up is quick and simple. You’ll be amazed at just how easy it is to make a delicious dinner.

Ingredients

  •  8-10 oz chicken breast, cut into bite-sized pieces
  • 1 bag of microwaveable, frozen stir-fry vegetables
  • 1 bag of microwaveable rice
  • Optional finishing touches (sesame seeds, red pepper flakes, green onions, cilantro, etc.)

Marinade

  • 2 tbsp San-J Teriyaki sauce (or other low-calorie alternative)
  • 1 tbsp soy sauce (optional or can use low-sodium version)
  • 1/4 tsp seasoned salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin

Instructions

1. Cut the chicken into bite-sized pieces and combine with marinade ingredients. You can do this the day before or a few hours before cooking. Feel free to modify the quantity or types of seasonings.
2. Microwave the frozen vegetables for about 5 minutes. This will save a lot of time if you find vegetables that can be steamed in the microwave. Subtract one minute from the package directions as they will finish cooking in the pan, and we don’t want them to be soggy.
3. While vegetables are steaming, heat a large skillet with 1 tsp olive oil over medium-high heat for 3-5 minutes to ensure it’s fully preheated. Do not add chicken until the pan is hot. It will taste much better if you’re patient. To test, sprinkle a few drops of water on the pan until it sizzles.
4. Carefully add the marinated chicken in a single layer. Cook for 1-2 minutes per side until browned. Do not flip too early.
5. Remove the vegetables from the microwave and strain excess water by cutting a small slit in the corner of the bag. Add the cooked vegetables to the skillet and mix well. Continue cooking for 2-3 minutes until the chicken is cooked through and vegetables get a slight char.
6. While the stir-fry finishes, microwave the rice according to package instructions (about 90 seconds).
7. Serve the finished stir-fry over the cooked rice. Garnish with your favorite toppings like chopped green onions, cilantro, sesame seeds, and/or red pepper flakes.
8. Enjoy with your favorite low-calorie drink. If you are new to cooking, remember it is a skill that takes practice and can be improved. Congratulate yourself for stepping out of your comfort zone!
9. This recipe makes two servings. If cooking for one, place the other half into a Tupperware and eat for lunch or dinner the next day.
